Would it be possible to make Shader Forge capable of inputing string variables for dynamic text in textures? I realize fonts are an issue, but perhaps there's a way of reusing Unity elements from their Gui Text or Text Mesh.

This is most likely too heavy to do on a shader level; you would be *much* better off using their Text Meshes, or similar.
